Peas and Paneer

 Ingredients 4 tablespoons ghee (clarified butter)
1 teaspoon salt
1 teaspoon coriander
1 teaspoon cumin seed
1/2 teaspoon cayenne
2 cups fresh green peas, hulled
oil for deep frying
8 oz. The Rich Cow brand Paneer cheese, cut in 3/4 inch cubes



Instructions 1. Heat the ghee and add salt, cumin seed and cayenne. Stir well, add peas. Continue to stir until the peas are well coated with the ghee.
2. Lower the heat and cook very gently, about 15 minutes. Stir gently from time to time. No water is needed.
3. When peas are tender, add the coriander. Mix well. Turn off the heat. Set aside.
4. Heat oil to 375 degrees in a deep fryer.
5. Drop the cheese cubes one at a time into oil. In about 1 minute or when golden, remove gently with a slotted spoon and drain on absorbent paper.
6. Add the browned paneer to the peas and heat gently together for 5 to 10 minutes and serve.
