For time out of mind, the people of the Indian sub-continent have preserved their fresh milk and cream by making them into fresh cheese and Ghee. Their fresh cheese is called Paneer. Their preserved cream is called Ghee. Over centuries, Indian cooks have developed a cuisine that depends on these native dairy products. The products are central ingredients in savory dishes such as Mattar Paneer and Palak Paneer. Paneer is also crucial in preparing popular desserts like Rasgulla and Sandesh (recipes available).

Paneer is homemade cheese that is similar to pressed Ricotta cheese except the curd is drier and has no salt added. Ghee is the traditional product that preserves butter by boiling away all its water content. Paneer is among the primary protein sources for Hindus and Buddhists who adhere to strict vegetarian diets. Paneer and Ghee are used in curried dishes. Paneer is very popular when wrapped in dough and fried. Paneer is often used in stir-fried dishes because it does not melt. Paneer is also used in preparation of popular desserts because its delightful texture—and complete lack of salt—make it an ideal base for sweet recipes.

Ghee does not need refrigeration. Paneer can be frozen to preserve its freshness indefinitely. The only adverse affect of freezing is to make the cheese more crumbly.
